Add the oil to a pan on medium-high heat and allow it to heat up
Once hot, add the diced potatoes (season to taste). Cook the potatoes till crispy and golden on medium-high heat. then remove and set aside. 2. Give the pan a quick wipe then melt in the butter and add the beaten eggs, occasionally stirring till light and fluffy on a medium-low heat (season with salt & pepper to taste) 3. Turn the heat back up to medium-high and give the pan another quick drizzle of oil, then add diced onions and diced garlic.  4. Once fragrant, add the sausages. break them up with the spatula and season with paprika and cumin. Stir till colour change and cook through. 5. to assemble the burrito, place the tortilla onto the tin foil then onto a warm tortilla (easier to roll) start with a layer of mashed avocado (1/2 an avocado), followed by 1/4 of the sausage mix, 1/4 potatoes, and 1/4 scrambled egg. Finish with 30g of grated cheese (optionally you can add some sour cream in there for for extra calories and flavour!) * to roll into a burrito, fold over the bottom to cover the filling and gently fold in the sides. From there, tightly roll it up into a burrito and wrap it in foil.
