Ilish Pulao Recipe ✨Marinate Fish (20-30mins max) - 7 pieces Hilsha Fish - 3tbsp Yogurt - 2tsp Red chilli powder - 1tbsp Coriander powder - 1tbsp Cumin Powder - 1tsp salt (salt to taste) - 1tbsp Ginger & garlic paste - 2tbsp Onion Paste ✨Frying the Fish - 1tbsp Ghee - 1/4 cup oil or as needed - 2tbsp onion paste (no need to brown) ✨Cooking the rice - 3 cups of Kalo jeera rice - 5 + 1/2 cup water ✨Whole Spices - 1-2 cinnamon sticks - 3-4 cardamom - 4 cloves - 1-2 bay leave - 4-5 green chilies ✨Method - Add marinated fish (fry for 5-6 minutes both sides) - Add rest of the marination, green chilies and cover the pot until oil separates - Remove Fish from the pot and little bit of Jhol (gravy) and keep the rest for cooking the rice - Add whole spices to the pot and add little more ghee if needed for frying with the gravy (that’s already there) - Add rice (cook the rice without the water for 5-6 minutes over medium heat) with green chilies - Add measured water, let it come to a boil , when the water levels with the rice check salt (add if needed) then lower the heat. - Cover the pot and let cook until the rice is done.
