This one is packed with flavor, and it’s SO refreshing and not too sweet, which is my ideal drink 👌 We start by making a simple syrup with honey, water, fresh ginger, lime zest and basil. Ginger adds a subtle spiciness that helps mimic the burn you would get from alcohol! Fresh cucumber juice makes up the base of the drink. It’s as easy as blending cucumber and straining it to remove the pulp! Combined with the infused honey, freshly squeezed lime juice and club soda for topping, this is every bit as good as any cocktail! (And of course, if you want to add a splash of gin, vodka or tequila, that would be perfectly fine, too!) Bookmark the recipe below and give it a try soon: Green Garden Mocktail 🍹💚 🍯 Basil Ginger Honey Syrup: 1/2 cup honey 1/2 cup water 1-in piece of ginger, sliced into thin planks Zest from one lime 5-6 basil leaves 🥒 Cucumber juice: 6 mini cucumbers, peeled or unpeeled and roughly chopped 2 tbsp water 🌱 To make two mocktails: 6 oz cucumber juice 2 oz freshly squeezed lime juice 2-3 oz infused honey syrup (depending on how sweet you like your drinks) Club soda for topping To make the syrup, add the honey, water, ginger, lime zest and basil to a small pot over medium heat. Stir well and bring to a simmer, then reduce heat to low for ~2-3 minutes. Remove from heat and let cool to room temperature. Strain the syrup and discard the solids. Meanwhile, add the cucumber and water to a blender and blend until smooth. Strain through a fine mesh sieve to remove the pulp. Fill a cocktail shaker with ice and add in the cucumber juice, lime juice and honey syrup. Shake well for 10 seconds, then strain into a glass with ice.
