Those are Pechay, not Bok Choy. They are the same vegetables but different varieties. Pechay have white stalks while Bok Choy are green.

Might have been better to brown the chicken first then remove from pan, thats when you sautè you onions and ginger with the left over fond for a more robust flavor then add your chicken again..
