Jalapeño Cheese Focaccia Sandwich Rolls 🌶️🧀  Ingredients: 1x batch same-day focaccia dough (recipe is pinned at the top of my page here or page 22 in my cookbook) Extra virgin olive oil to line tray  4 jalapeño peppers (2 diced finely and 2 sliced into rings) 175g (1 3/4 cups) cheese cut into fine cubes. I’ve used Red Leicester but Cheddar is another favourite!  Follow my recipe for same-day focaccia. After it’s mixed, cover for 15 minutes and prepare the jalapeños and cheese. When it’s time for first stretch and fold, sprinkle half the diced jalapeños and a handful of the cubed cheese (about 1/3 cup or 33g) over the dough. Stretch and fold as shown in video. Cover for 15 minutes and repeat again with remaining diced jalapeño and another handful of cubed cheese. Cover bowl for 1-1.5 hours and leave at room temp.  Prepare a large baking tray (half sheet pan or approx 18x13 inches) with nonstick parchment and 2-3 tablespoons of extra virgin olive oil.  When the dough is finished proofing in the bowl, tip it onto the tray and fold it into thirds as instructed in the focaccia recipe and then flip it over. Cover and proof for another 1-1.5 hours.  Preheat the oven to 220C/430F with the shelf set to the lowest position.  Drizzle the dough with extra virgin olive oil. Sprinkle half the remaining cheese cubes over the top and dimple. Do not spread the dough all the way to the edges of the tray (the rolls would be too thin). There should be some empty tray bordering the dough. Press the jalapeño rings into the dough.  Oil a dough scraper or knife and cut the dough into 4 footlong sandwich rolls (make as even as possible). Oil the scraper between cuts so the dough doesn’t stick. You may need to use your hands to help separate the cuts (as I do in the video). Spread the rolls evenly apart from each other and sprinkle over the remaining cubed cheese. Bake on the bottom rack for 20-22 minutes or until the cheese is toasted and the rolls are a light golden brown.
