LOW-CARB Cookie Dough Bread took the internet by storm back in 2020, and it's still a staple ever since! I've seen thousands of remakes and this is a staple in so many homes including mine (and for good reason!). So if you're looking for a quick sweet treat fix without the carbs, gluten, dairy, or sugar, try this! - low carb - sugar free - gluten free - grain free - dairy free - yeast free - keto - paleo - diabetic friendly Ingredients: - 1 tsp baking soda - Splash of ACV - 4 whole eggs - 1 cup of raw cashew butter (roasted will also work but raw taste more like "cookie dough" and gives a lighter color as shown) - chocolate chips of choice *option to sneak in collagen into the batter but not necessary Method: First add baking soda and AC to a mixing bowl and allow it to fizz. Add eggs and whip with an electric or stand mixture until eggs peak (about 5-10 minutes.) Add cashew butter and continue mixing until well incorporated (the eggs will deflate but that's expected). Fold in desired amount of chocolate chips then pour batter into a bread pan lined with parchment paper. Bake in a 350 F preheated oven for about 45-50 minutes (or until a toothpick comes out clean). Allow to cool before slicing. *Storage Tip typically pre-slice the entire loaf then freeze. Each slice thaws very quickly when removed from the freezer (I actually like to eat it frozen! so good!).
