DISHES THAT STEAM - Episode 2 is Steamed Chicken with Chinese Sausage and Mushroom This dish is an OG Chinese homestyle meal, every family has their own spin on it but pretty much use the same seasonings. It’s iconic because of how genuinely low effort but delicious it is. If you’re fast in the kitchen you can make this meal with steamed rice in 25 mins max !! Also don’t be afraid of steamed chicken, this dish is not like your typical British poached chicken. This is full of flavour - if you’ve never tried it pls do because it’s seriously life changing  5 dried Chinese mushrooms 
30g ginger
2 spring onions
2 links of Chinese sausage For marinating the chicken:
3 chicken thighs 2 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp Shaoxing wine 1/4 tsp ground white pepper
1/2 tsp sugar
1/4 tsp salt 1 tsp sesame oil
1 tbsp cornstarch  Add the mushrooms to a heatproof bowl, fill with hot water and cover with a lid.

Thinly slice the ginger, spring onions and Chinese sausage.

Debone the chicken and remove the skin.  Chop the chicken into bite sized pieces, marinate with seasonings and mix well. Remove the dehydrated mushrooms from the water, carefully chop the stalk off and slice into thin pieces. 

Place a shallow heatproof bowl upside down in your wok, pour enough water so it comes up halfway. Cover with a wok lid until boiling then carefully place a heatproof bowl on top. Add chicken, mushrooms, sausage, spring onions and ginger, cover with a heatproof plate and steam for 18-20 minutes on medium-low heat.

Serve with steamed rice and enjoy. #dishesthatsteam #chinesesteamedchicken
