you can also just pluck the flowers and add them in a salad instead of onion as they are easy milder

I just eat them as-is in salads and other dishes, or before they bloom I sautee the whole thing (including the stem) in stir fry or omelettes. Or if I miss the bloom entirely (so sad 😭), I let them go to seed and replant them.
