🌯 FAJITA FRIDAYS - SMOKY PULLED AUBERGINE FAJITAS 🍆  We love a fajita friday, but with the weather warming up, we decided to take things outside. Cooking and eating outside on the grill really does level these fajitas up 🌞 AD alongside making a selection of our favourite fillings, we used @Old El Paso UK trusty bbq fajita kit for our tortillas, smoky bbq seasoning + tomato salsa. It keeps things speedy, simple, and always tasty 🤤  The main event for these fajitas was smoky pulled aubergine, which we charred then cooked down in a rich tomato sauce. All done in the outdoor oven. We then quick pickled some onions, made guacamole too, and served alongside all sorts of delicious toppings 😍 So next time the sun’s out, why not get your friends, family, or loved one over, grab yourself a fajita kit, and enjoy an al fresco fajita friday. My full recipe can be found below - so enjoy + let me know if you give it a go 👇 INGREDIENTS (serves 4) 3 aubergine 1 Old El Paso fajita kit (seasoning, salsa + tortillas) 1 red onion, finely diced 4 garlic cloves, minced 2 tbsp tomato purée 1 tbsp cumin seeds 1 tbsp dried oregano 400g chopped tomatoes 1 tbsp red wine vinegar 1 lime 1 ½ red onions 2 limes Salt 2 avocados 1 lime ½ red onion Handful fresh coriander To serve: tortilla wraps, shredded lettuce, tomato salsa, pickled jalapeños, feta METHOD 1. Prick your aubergines with a fork, then roast in a hot oven / grill until the skins are blacked + charred (20 mins). Place in a bowl, cover with cling film, leaving to steam + cool before peeling the skin. Pull apart + chop with a knife, then sprinkle some bbq fajita seasoning on top.  2. Warm a glug of olive oil in a pan, then add the chopped red onion, allowing to soften for 5 mins. Add the minced garlic + tomato purée, cooking down for a further few mins. Season with cumin seeds + oregano, mix well, then add the chopped tomatoes. Add the smoky roasted aubergine, mix + allow to thicken for 10 mins. Finish with a splash of vinegar + a squeeze of lime juice. Season to taste with salt + pepper.  3. For the quick pickled onions, simply slice, add a large pinch of salt + squeeze in the juice of 1-2 limes. Scrunch everything together until softened + set aside until they turn light pink.  4. For the guac, scoop out the flesh of the avocados, then mash with a fork. Season with salt, add some chopped red onion + coriander if you like, finishing with lime juice. Set aside.  5.
