Pumpkin Donuts (makes 12): 200 g all-purpose flour • • • 500 g bread flour 130 g cake flour 150 g pumpkin purée 75 g sugar • 80 g starter (optional) • 7.5 g yeast • 345 g milk • 1½ eggs • 15 g salt • 165 g butter Brown Butter Maple Honey Glaze: • 60 g butter (browned) • 120 g powdered sugar • 30 g maple syrup • 15 g honey • Pinch of salt Directions: In a large bowl, mix together flours, sugar, salt, and yeast. Add in milk, eggs, pumpkin purée, and starter (if using). Mix until combined, then knead in softened butter a little at a time until dough is smooth and elastic. • Cover and let rise until doubled in size (about 1-2 hours). 5 Roll out dough to about ½ inch thickness and cut out donuts. 6 Place on parchment, cover, and let rise again until puffy (30-45 min). 7 Heat oil to 350°F (175°C) and fry each donut until golden brown on both sides. 8 Let cool slightly on a rack, then dip in the brown butter maple honey glaze while still warm.
