@sweetconfection: wow with this trend of croissnat sourdough bread!!! it is delicious and has a softer texture Ingredients - 430 g white bread flour - 85 g whole wheat flour - 395 ml water (reserve 15 milliliters and combine with the salt) - 12 g salt - 110 g sourdough starter - Filling - 1 stick of butter between the 3 mini dough balls -chocolate chips (optional) Steps 1. Combine the water, flour, and sourdough starter and let it rest for 1 hour. 2. Add the salt with the remaining water and fold the dough 4 to 6 times (check the dough's measurement and Mark where the dough is) 3. Let the dough rest for 35 minutes. 4. Fold the dough 4 to 6 times and let it rest for 35 minutes. 5. Repeat step (4.) 3 more times. 6. Once you have finished folding and resting the dough, place the dough in a covered container at room temperature, until it doubles in size (compared to the mark you made in step 2.) 7. On an unfloured counter, place the dough and divide it into 3, fill each one with a little grated butter and form 3 balls, just as I show in the video (rolling and folding until a ball forms). 8. In baskets or small bowl, let the loaf rest overnight (well covered). 9. The next morning, preheat the oven to 480°F. 10. Remove the 3 balls of dough from the refrigerator and score them. 11. In your bread pan, bake the loaves with the lid closed for 15 minutes, then bake them for another 15 minutes without the lid. 12.
