They are easy recipes to cook and impressive! To make the Mango Salad, add all ingredients in a bowl, and mix well. Set them in the refrigerator. 2. To make the Coconut rice, add the rice and coconut water to your rice cooker. Select the plain rice mode, and start the cooker. 3. Preheat the oven to 415°F. To make the Coconut Flake Baked Salmon, pat dry the salmon filets with a piece of paper towel and place them on a plate. Add the Dijon mustard and spread it out all over the salmon in a thin layer.  4. Add the panko breadcrumbs, sweetened coconut flakes, and melted butter on a lined baking pan. Mix them up and spread them out evenly.  5. Place the salmon filets on top and slightly press the breadcrumb mixture on all sides of the salmon. Bake at 415°F for about 10 minutes or until the salmon’s internal temperature reaches 145°F. Rotate the baking pan halfway through baking. Let the salmon cool on the baking pan for a few minutes before removing them from the pan. 6. To assemble, place the Coconut Rice and Coconut Flake Baked Salmon on the plates, and top the salmon with the Mango Salad (or on the side).
