Homemade Candied Ginger 🫚 for ep. 33 of Better Than Store-Bought!  It’s so easy to make with just two ingredients (ginger and sugar), it’s super flavorful and spicy, and it’s great for enjoying on its own, or in your favorite baked goods. You’ll also end up with a good amount of leftover ginger infused sugar that’s absolutely delicious in coffee, cocktails and baking!  This turns out to be so much more flavorful than any store-bought candied ginger I’ve ever tried, and it’s a great way to use it up if you bought too much!  SAVE this post so you can make it soon 👇 and don’t forget to follow for more homemade versions of your favorite store-bought snacks!  Step 1: Peel about 1 lb. of fresh ginger with a spoon. It’s easier and safer than a vegetable peeler!  Step 2: Slice the ginger into 1/8” pieces. They can be different sizes/lengths, just make sure the thickness is about the same so they cook evenly.  Step 3: Add the sliced ginger to a pot of boiling water and boil for about 30-35 minutes, until the ginger is slightly softened. Drain the ginger, reserving some of the liquid.  Step 4: Weigh your ginger (it will decrease in weight), then add it back to the pot with an equal amount of granulated sugar by weight. Add in about 1/4 cup of the reserved liquid per 1 lb of fresh ginger.  Step 5: Bring to a boil, and stirring often, cook it down until the sugar dries out and crystallizes. This takes about 15-20 minutes. Once the syrup is mostly reduced, the crystallization happens pretty quickly, so keep a close eye on it. Keep stirring to break up the sugar and evenly coat the ginger.  
Step 6: Once it’s crystallized, immediately transfer the ginger to a wire rack over a sheet pan to separate the sugar and the ginger. Let it cool. You can use the leftover sugar in baking, coffee, etc!  Storage: Store your candied ginger in an airtight container at room temp for about 3 months, or 6 months in the fridge. The sugar will last even longer. Enjoy!!
