Link in my bio Ingredients (Serves 2-3):  - 1-1,5 lb (450- 700g) lamb cubed   - 1 tsp each cumin, turmeric, sumac, thyme, chili, paprika - Salt & pepper to taste   - 1 onion sliced  - 2-3 garlic cloves chopped  - 1 cup any dry wine (or broth if you wish)  - 2 medium eggplants, cubed   - 2-3 small potatoes, cubed   - 1,5 cup tomato sauce   - 2 cups broth   - 2 sprigs rosemary   - 1 sprig sage   - Rice cooked, for serving   1️⃣ Cut lamb into chunks and coat evenly with spices.  2️⃣ Heat a heavy-bottomed Dutch oven over medium-high heat. Sear the lamb on all sides until browned. Remove and set aside.   3️⃣ In the same pot, add the onion and garlic. Sauté until softened and fragrant.   4️⃣ Pour in the wine and scrape up any browned bits from the bottom of the pot. Stir well to combine.   5️⃣ Add the lamb back to the pot. Place the rosemary and sage sprigs on top. Cover and cook on low heat for 40 minutes.   6️⃣ Remove the rosemary sprigs. Stir in the tomato sauce, diced eggplant, and potatoes. Mix well. Return the rosemary, cover, and cook on low heat for 1 hour until the vegetables are tender.   7️⃣ Remove the rosemary sprigs before serving. Pair the stew with a side of fluffy rice for a complete meal.
