@dailygracebakery: How I Bake My Sourdough Loaves Using the 2-Pan Loaf Method✨👇🏼 If you’re just starting your sourdough baking journey then I’m going to strongly advise you not to use your Dutch oven, but instead bake your sourdough bread using the 2-pan loaf method. You will not only save your back 😂 but baking your sourdough like this allows you to cut slices of bread easier for sandwiches. It’s a win win if you ask me!! I’ve recently updated a couple of things when using this method & I wanted to explain them for you! 1️⃣ I cold-proof my loaves in bannetons for at least 12 hours before baking. People often ask me why I don’t cold proof in the loaf pan, and it’s simply because I already invested in bannetons. Plus I prefer proofing my sourdough loaves in my bannetons because I find they proof better. 2️⃣These sourdough loaves are 900g. Emma from @butter.and.whisk noticed my loaves looked a little underproofed when I posted a picture of the crumb. But after some thought we realized my 960g loaves were wayyy too big to handle the size loaf pan. So I reduced my loaves to 900g and they’re perfect now. 3️⃣I bake these loaves at 460F for the entire bake. I used to bake at 490F for 25 min with lid on, and then 425F for 20 min with lid off. I realized it was taking so much time in between bakes to heat the oven back up so now I bake at 460F the entire time. 30 min with lid on and 15 min with lid off. 4️⃣I spray my loaves with water before baking. This gives the loaf pans some steam and allows for a nice crust to form on my bread. If you haven’t given this sourdough baking method a try, I strongly advice you to. I’m getting to the point in my micro bakery business where I may invest in an oven, but whether you’re a sourdough micro baker or not, this method will help you so so much! have you tested out baking eight loaves and using the bottom shelf yet. I can fit six on my top shelf. I'm just nervous to use the bottom shelf and have loaves burn.

I use different loaf pans, but I use a standard recipe. My loaves are 950g. I do use cooking spray and a brush to coat the pan. some loaves get so big that I have to.
