Makes 6 Parathas  Make a dough with 3 cups aatta with 1.5 approximate water to make a dough. I’ve used my kitchen aid here with the hook attachment. I do add the tiniest amount of salt. Let it rest for an hour Potato mixture: boil 3 potatoes. When fork tender discard water and mash them with a knob of butter, salt, pepper& and touch of garlic powder and about 1 cup of grated cheddar cheese.  1. Make a small dough ball, roll it in some flour, and  roll it out into a small disc. Spread some butter. And a big tbsp of the potato mixture.  2. Pull the sides of the disc up to close the ball. Now roll it out very gently so that the potato lies inside the ball. Some of it does come to the surface and that’s ok. It makes for a nice crispy spot. at this point it is up to you how thin you like your paratha. My kids like it crispy thin. For Imaan I keep it a little fluffier.  3. Spread butter on the side you will flip down first.  4. Heat your pan, I know I need a better pan. In my Defence this is my first time. Add a little bit of neutral oil or ghee. Pan must be medium hot 5. Gently place the paratha down and let it be for about 1 mins, slowly start to rotate it with the help of a cloth in order to get those nice golden spots. About 2 mins later (if it’s got a nice color on it) you can spread some butter on the uncooked side of the paratha and flip it.  6. Repeat the above. Cut into tiny triangles and serve with a dipping sauce of your choice. Enjoy.  Notes: You can make so many combinations with whatever is left over from the night before.
