Remmick was also very old. He wanted to connect to his people, which were before the time of Christ. which was interesting considering the church in the film was against Sammy.

I don’t think the other vampires were fixated on Sammie, but these vampires were like a hive mind connected to Remmick. They feel his pain when he is hurt or injured which is why they assimilated. The words were not theirs but Remmick speaking through them. Which to me makes that Cornbread scene more funny with how awkward it went. Also this makes sense because upon coming back to life how do they know they need permission to enter someone’s home
