Tomato Salad INGREDIENTS 400g mixed tomatoes (yellow, orange, green—whatever’s in season!) 10g basil leaves 1 shallot 0.5 lemon (zest + juice) 20g olive oil Salt & pepper PREPARATION 1️⃣ Roughly chop tomatoes (or halve the small ones). 2️⃣ Sauté shallots in a bit of olive oil. 3️⃣ Toss tomatoes with lemon zest & juice, salt, pepper, and olive oil. 4️⃣ Top with chopped basil—be generous! Crispy Oven Potatoes with Zucchini & Herbs INGREDIENTS 500g waxy potatoes 1 tbsp paprika Handful of chopped rosemary & parsley 1 tbsp vegetable oil Salt 1 zucchini 2 spring onions PREPARATION 1️⃣ Preheat oven to 170°C. 2️⃣ Cut potatoes into 3x3 cm chunks. 3️⃣ Toss with oil, herbs, paprika & salt. 4️⃣ Roast for 20–25 mins. 5️⃣ Slice zucchini & spring onions. 6️⃣ Add them to the tray 6 mins before the end. 7️⃣ Finish with more parsley & adjust salt to taste. #veganrecipes
