My favourite childhood Italian beef stew! 🥔🥕 Spezzatino di carne con patate e carote.  This brings me straight to my childhood, it was a big hit at home. My mamma still cooks this delicious beef stew sometimes during the weekend and it is proper comfort food at its very best. Perfect served simply with a little slice of toasted bread and olive oil and a side salad! Or you can even top it with puff pastry and bake it in the oven. You have to give this one a try. 😊 When it comes to cooking it, here are a few tips for you 👇 You can absolutely make it veggie or vegan, I have done it many times using lots of different types of meaty mushroom. Keep them nice and chunky and treat them in the same way as the beef. Add a few chopped sun-dried tomatoes and use a good homemade vegetable stock.  Make sure to cook the beef in batches and do not overcrowd the pan or you won’t get a nice colour on the meat. Before frying the meat, try to remove any excess of flour from it, it should just be a light coating. The easiest way to do this is to add the beef to a sieve and lightly shake it.  I have used 00 flour but you can also use corn flour to make it gluten free.   The meat should have at least 1.5 hours time of cooking on a medium - medium low heat. Depending on the cut you buy it might require a longer cooking time.
