How do you cook without a recipe? Intuitive cooking means using sensory cues, experience, and technique to guide decisions instead of following a strict recipe. Little decisions like using shaoxing wine vs. sherry, butter vs. starch, or pan searing vs. roasting add up to change a dish in big ways. 🏗️ I think of intuitive cooking like building blocks. A building block is a repeatable technique used in a recipe component. In this case, the first block is the technique to brine a pork chop, stacked with the sear and oven-finished cook. Another block is how to start a pan sauce, with options for flavor and thickeners built on top of that. Put enough blocks together on a solid foundation, and you've got a recipe. 🥒 I don’t cook with larger cuts often, so this is me planning last night’s dinner in real time. I ended up with a paocai-brined pork chop with douban pan sauce. Most of my everyday cooking off-camera is something like this. One pan, nothing too complicated, and no wild new flavor combinations.
