@homemadebybruno: Eggplant & Zucchini w Cherry Tomatoes 🍆 Ingredients 1 bunch of red spring onions (trimmed)- you can use any kind of onion 2 cloves of garlic 1 eggplant 1 zucchini 500 grams of cherry tomatoes 1/2 cup of white wine Bunch of Basil 1/4 cup of parm 300 grams of pasta - I used Calamarata Salt + pepper to taste Starchy Pasta Water 🍅 Method Saute the chopped onion in EVOO and the 2 cloves of garlic After 3 minutes add in your diced eggplant In the meantime dice your zucchini and then add After 10 mins add in your halved cherry tomatoes Cover and cook down for 15 minutes ( put your pasta in salted boiling water) Add in 1/2 cup of white wine and cook another 5 minutes Add a bunch of fresh basil and 1 ladle of the pasta water Add your al dente pasta along with another ladle of water and your parm Mix well and serve with some more parm and basil #italianfood #pastarecipe #fresh #pastatiktok #foryoupage
