Remove the pan from the heat. Add the milk chocolate and let it sit for 1 minute. Mix until smooth. Chop the M&M's into pieces. Place the unwhipped cream in a deep bowl. Add the whipping cream stabilizer, vanilla sugar, and sugar. Whip the cream until stiff peaks form. Add the condensed milk and mix for 20 seconds. Add the ganache and mix until combined. Cover a dish with plastic wrap. Spread half of the cream mixture over the dish. Sprinkle the M&M's on top and spoon the remaining cream mixture over them. Smooth it out evenly. Cover the M&M ice cream with plastic wrap and place it in the freezer to firm up, preferably overnight. Melt the white chocolate in a double boiler and transfer it to a small, deep bowl. Remove the M&M ice cream from the freezer and cut it into cubes. Dip the ice cream cubes one by one into the chocolate. Garnish immediately with an M&M before the chocolate hardens. Place the peanut M&M ice cream, covered, in the freezer. Tips: Keep half of the ice cream cubes in the freezer while dipping the other half in the melted milk chocolate to prevent the ice cream from melting. Take out the cubes from the freezer as soon as you start dipping the ice cream cubes in the melted white chocolate. Garnish and fill with chocolate as desired.
