pastís is an anise flavored liquor (Ricard being the most famous one in the south of France) and it's watered down so you can taste it better, but not everyone does it

I think most French not just in the south know to add water to it. Used to drink Pernod & Ricard back in the 80's & 90's.

It's exactly the same as drinking a lower alcohol drink instead of straight spirits. Drinking this or a beer gives basically the same hydration while consuming alcohol.
