3 healthy dinner recipes 🫶🏽 1. creamy high protein butternut squash linguine 🧡 -  recipe serves 2  for the sauce : 350g roasted butternut squash  1 tsp chilli flakes (optional)  4 tbsps nutritional yeast  300g silken tofu  1 veg stock cube (with 80ml boiling water ) salt and black pepper  250g linguine or pasta of your choice  1 white onion 2 cloves of garlic  a few handfuls of fresh parsley  olive oil  salt and black pepper  method:  place your roughly chopped butternut squash into a roasting tray and cover with olive oil chilli flakes, salt and black pepper. roast this in the oven at 180° for 30 - 40 minutes. when the squash is nice and squidgy you’ll know it’s done.  to make the sauce place all your ingredients into a blender and blitz, once smooth set aside.  get your pasta boiling in salted water for 8-10 minutes.  meanwhile heat a large pan with olive oil and fry your onion & garlic for 5 minutes until translucent, then turn the heat down and add all your sauce and stir through.  once the pasta is cooked, drain and add to the sauce ( make sure to reserve 1/2 a mug full of pasta water to add the sauce when needed) stir through adding a handful of fresh parsley, salt and black pepper and then you’re ready to  enjoy and serve up with some extra parsley and olive oil, enjoy 🧡 2. kale & quinoa salad 🥬🥬 recipe - serves 2  150g cooked quinoa  4-5 pieces of cavolo nero  1 can of chickpeas  4-5 mini cucumber’s dressing: 1tbsp miso ( I used red)  2 tbsps tahini  1 tbsps olive oil  black pepper  water to thin  method: 🥬🥬 cook your quinoa and set aside to cool. to make the dressing place all the ingredients into a bowl and combine, add some water to improve the texture.  chop your cucumbers & cavolo nero into equal chunks, drain and rinse your chickpeas, then place all your ingredients into a large bowl with the dressing on top. mix together and enjoy or store in an air tight container until needed. 🥬🫶🏽 3. miso & tahini noodles 🍜🍜🍜 recipe serves 2  miso dressing: 2tbsp dark  miso 2tbsp apple cider vinegar  5 tbsp tamari  1tsp ground ginger  1 tsp chilli flakes 3 tbsp tahini  6 mushrooms (chopped)  1 block of tempeh  200g udon noodles  2 spring onions (chopped)  1 aubergine  a handful of sesame seeds  olive oil  salt & black pepper  method: 🍜 make your dressing by combining all the ingredients together in a jar and mix well until combined.  next cut your aubergine in half and score it, cover in olive oil, salt and black pepper and brush some of the dressing all over. place this in the oven for 45 minutes - 1 hour.  meanwhile chop your veg, and tempeh and place the spring onion into the dressing jar to add in later. fry your mushrooms and tempeh in a large frying pan or wok for 5-7 minutes. meanwhile get your noodles cooking as per instructions.  next turn down the heat and pour in the sauce & the noodles mix together then once the aubergine is cooked you’re ready to serve up with the noodles on the bottom, the  aubergine, a sprinkle of sesame seeds and some extra tahini on top. enjoy 🍜🍜🍜 #dinner #mealideas #recipes #healthyfood #wholefood #veganrecipes #plantbased #fyp #foryoupage
