@blackskullsreaper: Strawberry Swirl Cheesecake For the Crust: - 1 1/2 cups graham cracker crumbs - 1/3 cup granulated sugar - 1/2 cup unsalted butter, melted For the Cheesecake Filling: - 24 oz cream cheese, softened - 1 cup granulated sugar - 1 teaspoon vanilla extract - 3 large eggs - 1/3 cup sour cream For the Strawberry Swirl: - 1 cup fresh strawberries, hulled and sliced - 1/3 cup granulated sugar - 1 tablespoon lemon juice Instructions: 1. To begin, preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until all ingredients are combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Place it in the oven and bake for 8-10 minutes until set. Once done, remove it from the oven and allow it to cool. 2. While the crust is cooling, prepare the strawberry swirl. In a small saucepan, combine the sliced strawberries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, or until the strawberries soften and release their juices. Lightly mash the strawberries with a fork or potato masher and then set aside to cool. 3. Next, prepare the cheesecake filling. In a large bowl, beat the cream cheese until it is smooth. Add the sugar and vanilla extract, mixing until well combined. Then, add the eggs one at a time, mixing on low speed until just combined. Finally, stir in the sour cream until the mixture is smooth. 4. Now it's time to assemble the cheesecake. Pour half of the cheesecake filling into the cooled crust. Drop spoonfuls of the strawberry mixture over the cheesecake filling, and use a knife to swirl them together. Pour in the remaining cheesecake filling and top with the rest of the strawberry mixture, swirling again to combine. 5. Bake the cheesecake in the preheated oven for 55-65 minutes or until the center is set but still slightly jiggly. Once done, turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. 6. After it has cooled, refrigerate the cheesecake for at least 4 hours or preferably overnight before serving. 7. To serve, remove the cheesecake from the springform pan and slice it into pieces. You may garnish it with fresh strawberries if desired. Enjoy your delicious strawberry swirl cheesecake!
