Here’s how we are ELEVATING a classic Victoria Sponge so your next guests are impressed and are coming back for another slice… 🍓🍰 A few more top tips from me:  • make sure to bake your sponges low and slow (around 160 degrees) to ensure you get that golden colour without it getting to dry around the edges.  • don’t cut the tops of of your sponge, the brown edges give it so much more character that everyone looks for in this classic bake.  • leave your sponges to cool bottom sode down, you want to ensure that you have a lovely even dome on the sponge without any indents from cooling wracks or condensation caused from the cold surface.  • make sure you line your tins well, and leave your cakes to cool in the tin to prevent crack on the edge or the sponge sticking. The last thing you want is a big don’t on the front of a cake you are t covering in buttercream.  • you can replace the buttercream with fresh cream, but don’t over whip it!!! It will thicken in the piping bag and the last thing you want it a buttery texture in your mouth.  • just go and have fun, it’s going to taste delicious.
