Vampires are litterly known to be like drugs in this universe to attract humans to them. I don't believe she was in love with Edward I believe she was obsessed with him and he admits to only caring for her at first because she's got singer blood I think that's what they call it he just really liked her smell then started dreaming a version of her that sees him as good and heroic. They aren't a healthy couple at all.
