@mollymcadam: Let’s Make Lemon Ricotta Pasta 🍋 Ingredients: (Serves 2) • 7 oz dried pasta or 10.5 oz fresh pasta • ⅔ cup whole milk ricotta cheese • 2 garlic cloves, finely minced • 2½ tablespoons fresh lemon juice (plus zest for garnish) • ⅓ cup finely grated Parmesan cheese • 1 teaspoon flaky sea salt • ½ teaspoon ground black pepper • ½ cup reserved pasta water • Small handful fresh basil leaves • Optional: red pepper flakes, for a little heat Instructions: 1. Cook pasta in well-salted water until al dente. Reserve 1 cup of pasta water before draining 2. In a bowl, mix ricotta, parmesan, lemon juice, garlic, salt, and pepper. 3. Stir in ½ cup hot pasta water to the ricotta mixture until smooth 4. Add drained pasta to a skillet over low heat with a splash of pasta water 5. Pour in the ricotta sauce, toss to coat, and warm gently until the sauce clings to the pasta 6.
