Uh, nah dude. I cooked in fine dining restaurants around the southeast, including under a James Beard Award winner. We typically grilled or broiled our steaks. If we did pan sear, it was in cast iron French pans.

A private chef yes, but a high end restaurant serving hundreds of guests a night does not have the time to individually pan fry steaks. Usually a grill of some kind
