Boil the spinach in water, then drain it well. 2. Let the spinach cool, then add the 3 egg yolks and blend until smooth. 3. In a separate bowl, beat the egg whites with a pinch of salt for about 1 minute. Add the sugar and continue beating until stiff peaks form. 4. Gradually fold the egg whites into the spinach mixture, stirring gently from bottom to top. 5. Add the flour and mix carefully until fully combined. 6. Pour the mixture onto a baking tray lined with parchment paper and bake at 180°C (356°F) for 10–13 minutes. 7. While still warm, roll the baked layer into a roulade (with the parchment inside), then let it cool completely. 8. Unroll the cooled base, spread the cottage cheese over it, then place the salmon and sliced avocado near one edge (not over the entire surface). 9.
