 Ingredients
 3 large russet potatoes
 1 tsp salt (for the water)
 4 strips of bacon cooked and chopped
 Fresh chives
 1 tablespoon garlic powder
 1 tablespoon onion powder
 1 teaspoon salt
 1 teaspoon pepper
 3-4 cubed cheese sticks
 1 egg
 1 cup Italian seasoned panko bread crumbs
 
 Start by using Rada’s vegetable peeler to peel your washed potatoes, then chop them into cubes. Boil your potatoes in salted water until just fork tender.  You don't want to overcook them.  Then go ahead and cut up your sticks of cheese into small cubes. Go ahead and cook your sliced bacon. To your potatoes, you will add garlic powder, onion powder, salt and pepper. Mince up your fresh chives. You can do them as big or as small as you like. Then add the chives and cooked bacon to your potatoes.  Use a hand mixer to evenly mix your ingredients.  Then take a spoonful of the potatoes and place them into the palm of your hand, add one cheese cube.  Roll this into a firm ball shape.  Then roll the potato ball into the egg, then into the bread crumbs.  Once you have a few of these ready, you will add to your hot oil.  I used one of Rada’s slotted spoons to ease the potatoes into the hot oil. Cook for 1-2 minutes until golden brown.  If you overcook, the cheese cube will melt out.
