A Day in the Life at Noma Kyoto Tap access card; doors open on a fresh restaurant. Time for the Front of House team to start preparing for the first guests… ironing linens, pressing juices, and carefully setting each table. Meanwhile, our kitchen starts brimming to life, fires lit, Mise en place sorted, coffee brewed. By 11am, we hold our first service meeting of the day, an hour till guests arrive. A mix of excitement, nerves and anticipation for the new guests that are about to experience what we proudly offer. “We’re open!” Bellows Pablo at 1200. Everyone in position as the doors open… “WELCOME”. As the last guests trickle out at 4pm, we begin the process once more - cleaning, resetting, preparing. A new service, a new energy. 5pm. Service meeting number 2. Review notes, discuss guests experience, and focus on what’s to come… New guests. Another briefing held directly after, this time Front of House only. “Let’s have a tip top Tuesday”… “Ja Tak” rings out. 6pm. Doors open once more. “WELCOME” is heard by the new guests as we usher them to their tables under dancing leaves. 11pm. Guests trickle out, cleaning is finalised, and we reset for the next day to come. Each evening brings a renewed sense of gratitude—for Kyoto, for this experience, and for every person who joins us here. — Noma Kyoto, 2024.
