Recipe⤵️ Would you eat this? Shepherd’s Pie Baked Potatoes Ingredients: 2 large yukon gold potatoes Salt, to taste For the Mashed Potatoes: 1 tbsp unsalted butter, softened 2 tbsp sour cream 3 tbsp heavy cream 2 tsp dried parsley ¼ tsp salt, plus more for the potatoes ¼ tsp black pepper For the Filling: ½ tbsp unsalted butter 2 baby carrots, sliced ¼ lb ground chicken 1 tbsp marinara sauce 2 tsp Worcestershire sauce ½ tsp dried thyme ¼ tsp dried oregano ¼ tsp salt ¼ tsp black pepper Directions: Wrap the potatoes each in a wet paper towel and microwave for 12 minutes, or until soft all the way through Once cooled, remove the paper towels and cut off the tops, then scoop out the insides to make them into bowls Sprinkle the potato bowls with salt For the Mashed Potatoes: Place the scooped parts of the potatoes into a bowl (remove any skin), along with the butter, sour cream, heavy cream, parsley, salt, and black pepper, then mix until creamy Optionally, place into a piping bag or resealable plastic bag and cut the corner off For the Filling: In a nonstick pan over medium/ low heat, metl the butter and add in the carrots Cook for 6-8 minutes, until softened, then add in the chicken, marinara sauce, Worcestershire sauce, thyme, oregano, salt, and black pepper Use a spatula to break up the ground chicken, then cook until browned and the liquid has mostly evaporated, around 8-10 minutes Preheat the oven to 400 F Place the potato bowls on a baking sheet covered in aluminum foil Scoop the meat filling into them, then top with the mashed potatoes Bake for 10-12 minutes Turn the broiler on high, then broil for 2-3 more minutes, checking on it every minute (for me, it was 2 minutes and 30 seconds) Enjoy!! #bakedpotato #shepherdspie #trendingfoods #viralrecipes
