Buldak Cauliflower Fritters recipe ⬇️ 1 head cauliflower (cut into small florets) Soak in salted water (or vinegar) for 5–10 min, rinse, and dry well Batter ingredient: 1/2 cup all-purpose flour 1/2 cup corn starch or rice flour 1 egg (optional, helps batter stick) 2-4 tbsp Buldak hot sauce (2 tbsp is midly spicy) 1 tsp baking powder 1/2 cup sparkling water (or lemon-lime soda – won’t affect flavor much) 1 tsp salt 1 tsp onion powder 1 tsp garlic powder 1 tsp black or white pepper Quick dipping sauce: ¼–⅓ cup mayo (eye-balled) Squeeze of lemon or lime (a wedge) 1 tsp minced garlic Salt to taste 1. Trim the stem of the cauflower 2. Cut into bite-sized florets. cut into small florets. Big florets take longer to cook which then can burn the batter while frying 3. Soak in a large bowl of water with 1 tbsp salt or vinegar for 5–10 minutes. 4. Rinse 2–3 times, then drain and pat dry thoroughly. 5. Whisk all batter ingredients in a bowl until smooth. Set aside. 6. In a deep pot (cast iron works great), heat oil to 350–375°F. I used canola oil. 7. Dip each floret in the batter, then carefully place in hot oil. 8. Fry for about 3 minutes, flipping to cook evenly on all sides. 9. Carefully remove with a strainer or slotted spoon and place on a wire rack to drain excess oil. 10.
