That not how to use saffron. You grind it with sugar then let it infuse slowly with milk, then add the milk to the dish. Better flavor for less saffron.

Add some cashews and raisins toasted in ghee and it’ll make the payasam even better. Also, there are so many varieties of payasam, including ones that use vermicelli instead of rice in case you hate the texture of rice.
