@eatwithalyssa: Steak Fajita Meatballs🥩🫑 #Recipe #EasyRecipe #highprotein #lowcarb #mealprep #mealprepideas #dinner In a large mixing bowl add: -2 bell peppers and 1 small yellow onion (that have been finely diced, charred in a pan, and completely cooled) -1 tablespoon of minced garlic -2 whisked eggs -2 pounds of 85/15 ground beef -3 tablespoons of flour -8 ounces of shredded Monterey Jack cheese -1 packet of fajita seasoning -beef bouillon powder, and Sazon (Remember to always make a test meatball to see if you seasoned it enough) Lightly mx it all together. Then get about 2 tablespoons worth of the mixture, and roll it into meatballs. Sear these on all sides in the same pan as the veggies (on a little bit below medium heat,) and make sure to add more oil if necessary. The best part about these is that the cheese crisps on the outside of the meatballs! (If the cheese is still sticking, that means the meatballs aren’t ready to flip.) This will make anywhere from 30 to 40 meatballs. They’re great for meal prep, and can be frozen after cooking! Today I made a whole fajita platter, but I usually eat these with just an avocado ranch salad and it’s so delicious. Enjoy💜
