For the Crust *Preheat the oven at 350°
1½ cups graham cracker crumbs(180g)
¼ cup unsalted butter melted
2 tablespoons granulated sugar Bake for 15 minutes, pull and set aside. For the Filling: *Preheat the oven to 325°
2 pounds (900g) cream cheese, at room temperature 1 1/3 cups (270g) sugar Pinch salt 2 teaspoons vanilla extract 4 large eggs, at room temperature 2/3 cup (160ml) sour cream, at room temperature 2/3 cup (160ml) heavy cream *Place cream cheese in a bowl and beat on medium creamy. Add the sugar, salt, vanilla, and lemon juice. Beat until the mixture is well combined and completely smooth. *With the mixer on medium speed, add in the eggs one at a time. Once the eggs are well combined, mix in the sour cream until well incorporated. Pour the batter into the cooled, cinnamon roll lined crust. *Bake for 40 minutes or until the outer 1-2 inches of the cheesecake are set but the middle is still wobbly. 
*Turn the oven off and crack the door open a little, let the cheesecake cool for about an hour in the oven. 
*Take the cheesecake out of the oven and out of the water bath, let it cool completely on the countertop and then transfer it to the fridge to set for at least 4 hours before unmolding.
