@gidsgids: Filipino Pork Adobo – Gids’ Recipe
Tender pork belly braised in a rich, tangy, and savory sauce. A comforting Filipino classic best paired with steamed or garlic fried rice. Ingredients Pork & Aromatics: * 2 lbs pork belly, cut into bite-sized pieces * ½ yellow onion, thinly sliced * 6–8 cloves garlic, crushed or minced * 2–3 bay leaves * 2–3 tsp black pepper (adjust to taste) * Kosher salt, for seasoning Adobo Sauce: * 100 ml white vinegar * 75 ml water * 50 ml soy sauce * 1 tsp dark soy sauce (optional, for deeper color) * 3–4 tsp brown sugar Instructions 1. Thinly slice the onion and crush the garlic. Set aside. 2. Season one side of the pork with kosher salt. In a pan over medium heat, sear pork until browned on both sides. Remove and set aside. 3. In the same pan, sauté onions for 1 minute. Add garlic and a pinch of salt; cook for another minute. 4. Return the pork to the pan. Deglaze with 75 ml water, scraping up the brown bits. 5. Add vinegar, soy sauce, dark soy sauce (if using), bay leaves, black pepper, and brown sugar. Stir to combine. 6. Cover and simmer on low heat for 45–60 minutes, or until pork is tender. Add a splash of water if sauce reduces too much or becomes too salty. 7. Serve hot with rice. I never knew what this was called until I was grown...im 42 but when I was a kid, my mom's best friends was a Filipino lady named Lou and my mom always called it Lou pork.... so that's what it was called. 🤣

So what's your family's version of adobo? Mine sometimes adds coconut milk + red chili = "adobo sa gata".
My grandma used to add cheese in hers + hard boiled eggs.

I don't braise it with vinegar... 2 minutes before it's done... I add the vinegar and let it simmer for 2 minutes. That's just me. 😅😳✌️

I ran out of dried bay leaves and ended up with fresh basil… I kid you not it tastes so good with fresh basil in my adobo.
