When I was first diagnosed with PCOS and pre-diabetes, I felt completely overwhelmed. There was so much to change, and I barely had time to cook, let alone figure out meals that wouldn’t make things worse. I wish I could’ve told my past self that there are quick and easy recipes out there that don’t take hours or require crazy skills—meals like this cabbage egg kimbap that give me peace of mind without spiking my blood sugar🍳🥬🌿 So if you’re in the same boat, feeling lost or unsure where to start, I see you. It’s not easy, but it can be simple. This kimbap has become my go-to for when I need something filling, high-protein, and quick! ⭐️ Sparky’s quick & easy high protein, low carb meal: Cabbage Egg Kimbap (makes 3 kimbap rolls) 🍙 3 Seaweed Sheets 🍳 Cabbage Egg Omelette: 1/4 of a cabbage thinly sliced, 6 eggs, 1 small carrot thinly sliced, 1/2 tsp salt (cook 1/3 of the batter at a time to make 3 omelets) 🥬 Veggies of Choice - I did lettuce, cucumber, & avocado Optional: brush of sesame oil on top + sprinkle of sesame seeds (I love eating it with kimchi on side!) What’s PCOS? PCOS, or Polycystic Ovary Syndrome, is a condition that affects how a woman’s ovaries function. It’s a common condition affecting many women. It causes an imbalance in hormones, which can disrupt your menstrual cycle. Beyond that, PCOS can lead to other issues like weight gain, persistent acne, unwanted hair growth in areas like the face or chest, and even hair thinning on your scalp. It also affects how your body handles insulin, which can make managing blood sugar levels more difficult—this is why I’ve had to make significant changes to my diet and lifestyle. PCOS isn’t something that just goes away, but with the right approach, it can be managed effectively. Disclaimer: this is my personal experience with managing PCOS & pre-diabetes, not medical advice. Please consult a healthcare provider for professional guidance❤️ • • • • • • • • #pcos #prediabetes #hormonehealth #highproteinmeal #ketokimbap #lowcarbmeal #healthyrecipe #hormonebalance #chronicillness #pcosjourney #pcosdiet #pcoslifestyle #reversingprediabetes #bloodsugarcontrol #wellnessjourney #healthyliving
