Legend has it that if you make this cookie, you won’t be tempted to eat all of the Halloween candy before trick-or-treaters get there.  Recipe below and on my website 👻 Makes 2 dozen cookies Time: 45 minutes INGREDIENTS 3 cups old-fashioned rolled oats 2 cups (250gr) all-purpose flour 1 tsp baking soda 1 tsp sea salt 1 cup (2sticks) unsalted butter 1 cup creamy peanut butter* 1 cup (220gr) packed light brown sugar 1 cup (210gr) granulated sugar 2 large eggs 2 tsp vanilla extract 1 heaping cup (8oz) milk chocolate chips* 1 cup + 1/2 cup mini M&M’s, separated*  1 cup corn flakes* Maldon sea salt flakes (optional) *See recipe notes for substitutions METHOD 1. Preheat the oven to 375°F 2. Add oats, flour, baking soda, and salt to a large bowl and mix thoroughly. 3. Use room temperature butter, or cut into 1” cubes and add butter, sugars, and peanut butter to the mixer fitted with the paddle attachment. Mix on high for about five minutes until very whipped and creamy. Scrape the bowl a couple of times during this process. 4. Add eggs and vanilla and beat for another minute.  5. Slowly add the dry ingredients with the mixer on low and mix until almost combined. 6. Add the chocolate chips, corn flakes, and 1 cup of mini M&M’s, and mix for another 30 seconds, careful not to overmix. 7. Prepare a baking sheet with parchment paper. Using a 1/4 cup measuring scoop, measure out 6 dough balls onto it evenly spaced.  8. Pour a 1/2 cup of M&M’s in a small bowl, and gently dip the top of the dough ball into the M&M’s so about 2 tsp worth stick. Repeat with remaining dough balls then top with a pinch of flakey sea salt (optional). 9. Bake for about 16 minutes, rotating about halfway through and moving to the other rack if you’re baking two sheets at a time. Repeat until remaining are baked. 10. If you want perfect circles, use a 4-6 diameter bowl or cookie cutter to scoot the cookies while they are still hot and fresh from the oven.  11. Let cool completely before eating (if you can), so you can really appreciate how crunchy this cookie is.
