My cucumbers, my horseradish, my recipe. 🫙🥒 #pickles #horseradish #pocklerecipe #canning #preserving #harvesting #harvesttohome #oreserving #easyrrcipes #pickling 🥒 **Homemade Horseradish Pickles Recipe** 🧂 Ingredients: *2 lbs (about 8 small-medium) pickling cucumbers * 2 cups white vinegar *1 ¾ cups water *2 tablespoons kosher salt *1 tablespoon sugar (optional, balances flavor) *4–5 garlic cloves, peeled and smashed *2 tablespoons prepared horseradish** (or 2–3 tablespoons freshly grated horseradish root for more heat) *1 teaspoon black peppercorns *1 teaspoon mustard seeds *½ teaspoon crushed red pepper flakes** (optional, for added spice) *Quart-sized mason jar(s), sterilized 🥣 Instructions: 1. **Prep Cucumbers:** * Wash cucumbers and slice into spears, chips, or keep whole (cut off blossom end). * If you prefer extra crisp pickles, soak them in ice water for 1 hour before pickling. 2. **Make the Brine:** * In a saucepan, combine vinegar, water, kosher salt, and sugar. * Bring to a boil, stirring until salt and sugar dissolve. * Remove from heat and let cool slightly. 3. **Pack the Jars:** * In each sterilized jar, layer: * Garlic cloves * Horseradish * Peppercorns, mustard seeds, red pepper flakes (if using) * Then pack in the cucumbers tightly. 4. **Add Brine:** * Pour the warm brine over the cucumbers, leaving ½ inch of headspace at the top. * Tap jars gently to release air bubbles; seal with lids. 5. **Refrigerate or Process:** * **Refrigerator Pickles:** Let cool, then refrigerate.
