Why I love Korean food… Definitely nothing bland or boring here😍 ⭐️Sparky’s Dolsot Bibimbap recipe (perfect for 1 serving) INGREDIENTS 1 cup cooked white rice ½ zucchini or yellow squash, thinly sliced ½ carrot, julienned 3-4 shiitake mushrooms, sliced ½ cup seasoned bean sprouts (store-bought or quickly blanched with sesame oil and salt) ½ cup seasoned spinach (store-bought or blanched with sesame oil and salt) ¼ cup spicy radish kimchi (or regular kimchi) ½ can tuna (or swap for beef, tofu, or your favorite protein) 1-2 tbsp gochujang (Korean red pepper paste) 1 fried egg Sesame oil Sesame seeds for garnish INSTRUCTIONS Prep your veggies: Heat a bit of sesame oil in a pan. Sauté zucchini/squash, carrots, and shiitake mushrooms separately until tender, about 2-3 minutes each. Lightly season with salt. If using store-bought seasoned bean sprouts and spinach, set them aside. If making at home, blanch them and toss in sesame oil and salt. Prepare the protein: For tuna, drain ½ can and lightly sauté the tuna in sesame oil for 2-3 minutes. For beef or tofu, cook with a pinch of salt until done. Assemble the bibimbap: Heat a drizzle of sesame oil in a dolsot (stone bowl) or regular non-stick pan. Add a layer of cooked rice and press down gently to get that crispy bottom. Arrange the sautéed veggies, seasoned bean sprouts, seasoned spinach, spicy radish, and protein on top of the rice in sections for a colorful look. Top it off: Fry an egg sunny-side-up and place it on top of everything. Add a spoonful of gochujang in the center and sprinkle with sesame seeds. Serve and mix: Once the rice is crispy and everything is warm, mix it all together and enjoy!
