@chefthombateman: All about the Sides, Part 6. Twice Baked French Onion Mash - I will be totally honest I wasn’t sure this was a good idea. I was wrong it’s glorious and you should try it immediately (or whenever you can be bothered) Serves 3-4 as a side or if you’re a potato monster like me one as a main. 800g Maris piper potatoes 150g butter 100ml milk 2 onions 1 tsp fresh thyme leaves 1 bay leaf 150ml white wine 2 garlic cloves 500ml beef stock Gruyère cheese Salt and pepper 1. Bake the potatoes at 180c for 50 mins or until tender, push them through a sieve while still hot. Add the cold cubed butter and incorporate before adding the milk and salt to taste. 2. Thinly slice the onions add a little oil/butter to a large pan and start at a high heat once they start to break down reduce the heat add thyme, bay and salt. Cook on a low heat stirring regularly until they reach a sticky dark brown if they are catching add a splash of water to steam. 3. Grate in the garlic, add the wine then the beef stock and reduce until very little liquid remains 4. Combine with the mashed potatoes, how much is really up to you. 5. Grate over lots of gruyere then bake at 220c for 15/20 mins or until cheese is golden and oozy #potato #sidedish #comfortfood
