A super simple same day bagel recipe with full instructions and timings!  Full recipe for 8 medium sourdough bagels: - 100g sourdough starter (or 1 sachet ~7g/2tsp instant yeast)  - 260ml water - 500g bread flour - 2 tbsp honey - 8g salt Method & timings: 8am: Main Mix - Add your starter/yeast, water, honey, flour and salt to a bowl and mix until combined (the dough will feel dry at first but keep mixing)  - Transfer to a lightly floured surface and knead for about 10 mins  - Kneading but also time give dough strength - if your dough isn’t becoming smooth, try resting it for 5-10 mins to relax and give it another knead.  - Cover with a damp tea towel and rest for 6-8 hours at room temp or until 80-100% growth (100% =1 doubled). This bulk fermentation time depends highly on the temp of your house and your starter so keep an eye on your dough!  4pm: Pre-shape  - Divide into 8 equal balls, cover with a damp tea towel and rest for 30mins (gives time to relax before the final shape) 4:30pm: Final Shape (preheat oven too) - Shape into bagel shapes and place on lined baking sheet - TOP TIP: wish I knew sooner but cutting the baking paper allows you to drop them into the water without handling the dough - Rest for 30mins (final rise  5pm: Boil & Bake - Bring a large pot of water with a tsp baking soda (helps but not essential) and about 4 tbsp honey/treacle/sugar  - Boil your bagels for 30 seconds on either side and transfer to a wire rack - Brush with a light egg wash and add your toppings of choice  - Transfer to lined baking sheet and bake for 25-28 mins at 220c (425f) until golden  - Enjoy!! #SourdoughBagels #HomemadeBagels #BagelRecipe #SourdoughBaking #sourdough
