These Turkey Taco Stuffed Spaghetti Squash bowls are loaded with flavor, packed with protein, and perfect for an easy, feel-good dinner. 🌮✨  Ingredients: -2 small spaghetti squash -1 lb ground turkey -1 green bell pepper diced -1 white onion diced -10 oz can of diced tomatoes with green chiles -1/2c shredded cheese -2 green onions thinly sliced -1/4 c of chopped cilantro -2 tbsp olive oil (divided into 1 tbsp & 1 tbsp, plus more for squash) -1 tbsp cumin -1/2 tsp paprika -1/2 tsp garlic powder -1/4 tsp chili powder -1/4 tsp oregano -salt & pepper -2 tbsp water Steps: 1. Preheat oven to 400°F. 2. Cut spaghetti squash in half long ways. Using a metal spoon, scoop out seeds. 3. Season inside of squash with olive oil, salt & pepper. Place each squash inside down on a lined baking sheet. Pierce outisde with fork 4-5 times.  4. Bake for 35-40 minutes or until squash easily shreds with a fork (note: larger squash may need longer). 5. While squash is baking, begin warming a pan with 1 tbsp of olive oil on medium-low heat. 6. Add peppers and onions to the pan and cook for 3-4 minutes.  7. Move peppers and onions to the outside of the pan. Add ground turkey and 1 tbsp of olive oil. Begin breaking up the turkey as it cooks.  8. Once turkey appears mostly done, add salt, pepper, seasoning, diced tomatoes, and water. Mix everything together including the peppers and onions. Cover and cook 8 minutes. If squash is not done, remove from heat and leave covered. 9. Once squash is done, shred with a fork and add a 1/4 of the turkey mixture to the squash bowl.
