Cranberry Sauce Cheesecake Whether you have leftover cranberry sauce after Thanksgiving or need a last-minute idea to bring to a dinner party, this recipe is for you! And if you don’t celebrate Thanksgiving but want a delightful holiday bake, it’s perfect for that too.   Cranberry Sauce  - 2 cups (200g) fresh or frozen cranberries   - ¾ cup (150g) granulated sugar   - ½ cup (120ml) water   - 1 tsp orange zest (optional)   - 1 tbsp orange juice or lemon juice   1. Cheesecake   Crust Ingredients: - 1 ½ cups (150g) graham cracker crumbs   - 2 tbsp (25g) granulated sugar   - 6 tbsp (85g) unsalted butter, melted   Filling Ingredients:  - 16 oz (340g) cream cheese, softened   - 1 cup (200g) granulated sugar   - 3 large eggs   - 1 cup (240ml) sour cream   - 2 tsp vanilla extract   - ½ cup (60g) flour   1. Preheat your oven to 325°F (160°C). Mix the graham cracker crumbs, sugar, and melted butter in a blender or bowl. Press the mixture firmly into a 9-inch (23cm) springform pan. Bake for 10 minutes, then set aside to cool.   2. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Mix in the sour cream and vanilla until combined, then add the flour and mix well.   3. Pour half of the cheesecake batter over the crust. Spoon small dollops of cranberry sauce (about ⅓ cup) over the batter and swirl gently with a knife. Add the remaining batter on top and repeat with more cranberry sauce dollops.   4. Place it in the oven and bake for 50–60 minutes, or until the center is slightly jiggly but set.  5. Refrigerate for at least 4 hours or overnight before serving.
