it's because they had to invent the tech to make the CGI in those movies and had time to do it. now studios wanna rush projects and now that it's been around a while people have figured out shortcuts to get these results

It’s because old cgi was treated like an art style where hundreds of employees would spend hours animating each scene using cgi, cgi nowadays is treated more like a tool rather than an art style with less people working on it. It hasn’t gotten worse people have just become lazy and greedy
