a good bartender should be trained to judge (quietly and in their head without making any facial movements) and possibly ask them if they would be interested in a signature drink on their menu comparable to an appleteni that they might also like (a polite suggestion) then if the patron still wants a appletini dont push back at all and just make the damn drink
