Bring the pot to a simmer on the stove, cover, and bake in the oven for 2 hours. Afterward, uncover and bake for another 30 minutes—total cook time: 2.5 hours. The lamb should be super tender but still clinging to the bone. 7. Remove the lamb and keep warm. Discard the bay leaves and thyme. Strain the sauce, pressing out all the goodness from the veggies. Return the sauce to the pot and simmer if needed until it’s beautifully thickened. Season to taste. 8. Plate the succulent lamb shanks over mashed potatoes or cauliflower puree, generously smothered with that rich sauce.
