🥘🔥🍖 Braised Beef Short Ribs with LeCreuset Alpine #AD I’ve partnered with @Le Creuset Canada to feature their new Alpine Outdoor cookware collection. They challenged me to come up with a fall and thanksgiving inspired meal with their beautiful black enamel fire friendly cookware. RECIPE -Preheat dutch oven over medium heat, add 3 tbsp olive oil -Sauté diced aromatics (1 large onion, 4 cloves garlic, 1 large carrot, and 3 stocks of celery) cook until softened and lightly browned -Generously season 8 boneless beef short ribs with salt -Grill short ribs on all sides over hot coals until golden brown then set aside -Add 1 can of tomato paste to the browned aromatics, cook until darkened and sticky -Deglaze pot with 1 cup of red wine, releasing any fond, and reduce until syrupy -Add 500ml of beef stock and let it simmer, add any desired seasonings  -Use emersion blender and combine ingredients until smooth and cohesive. -Nestle short ribs into the braising liquid, cover to cook low and slow for 2.5–3 hours -While the beef braises, add mushrooms to the grill basket and cover with foil to sweat -Add vegetables to the rectangular pan, season with salt and olive oil to sauté -Once the beef is fork tender remove from pot and set aside -In a small pot combine equal parts butter and flour (2tbps each) and heat to create a roux  -Strain braising liquid into the roux, stir until glossy smooth, season to taste  -Boil peeled potatoes in salted water until tender, remove water and mash with salted butter and cream -Serve short ribs over the mashed potatoes, spoon over the rich sauce, and top with mushrooms and vegetables
